Ingredients: 2 tablespoons vegetable oil; 1 onion, in cubes; 3 cloves garlic; 3 tomatoes, by half; 1 cuaresmeño chile; 1/2 bunches cilantro; 1 epazote; 2 cups fish broth; 3 tablespoons vegetable oil; 300 grams red snapper; salt and pepper; 10 clams, washed; 200 grams squid rings; 10 large shrimp, clean, with skin; 3 tablespoons vegetable oil; 1 tablespoon butter; 1 cup rice, soaked; 1/2 cups onion, finely chopped; Sidral Mundet® Apple flavor

Heat the oil in a skillet over medium heat and sauté the onion, garlic, tomatoes, chiles, epazote, and cilantro until the ingredients soften. Pour in the fish broth and cook for 10 minutes or until the broth reduces by half. Let it cool slightly. Blend the preparation until you obtain a homogeneous mixture and strain. Set aside.
