Ingredients: 1 package LALA® Plenia® sausages; 1 1/2 cups white rice, cooked, for the meatballs; 1 cup Manchego cheese, grated, for the meatballs; 1/2 cups onion, finely chopped, for the meatballs; 1/4 cups parsley, finely chopped, for the meatballs; 1/2 cups breadcrumbs, for the meatballs; 1 egg, for the meatballs; salt; pepper; 5 tomatoes, for the sauce; 1/2 cups tomato purée, for the sauce; 2 tablespoons chipotle chile in adobo sauce, for the sauce; 1 teaspoon cumin, for the sauce; 1 teaspoon oregano, for the sauce; salt, for the sauce; pepper, for the sauce; vegetable oil, for frying; oregano, fresh, for garnish

For the meatballs, chop the LALA® Plenia® sausages into medium cubes on a cutting board. In a bowl, combine the rice with the manchego cheese, onion, parsley, breadcrumbs, egg, and LALA® Plenia® sausages; season with enough salt and pepper and mix until you have a pasty and manageable mixture. Form small balls with your hands and refrigerate them for 30 minutes.
