Ingredients: vegetable oil; 1 cup red onion, sliced; 2 cups mixed bell peppers; 1/2 cups radish; 2 cups shrimp, clean; 200 grams rice noodles, soaked; 1/2 cups water; 2 tablespoons fish sauce; 3 tablespoons sugar; 2 eggs; 1/2 cups chives, stems; 1 1/2 cups bean sprouts; lime, quartered, for serving; 2 tablespoons peanuts, chopped, for serving; 1 teaspoon chile powder, for serving; cilantro, for serving

Heat a large skillet over high heat, pour in enough vegetable oil, heat for a couple of minutes and add the red onion, bell peppers, and radish. Sauté the Pad Thai ingredients for 3 minutes, then add the shrimp and continue sautéing for 2 minutes. Add the rice noodles, water, fish sauce, sugar and mix with the vegetables. Cook for 3 more minutes or until it reaches a soft texture.
