Avocado Balls Stuffed with Cheese

Use the rice that you have left over the previous day and prepare these original Oaxacan cheese croquettes, rice and avocado. They are baked so they are very crispy on the outside and creamy on the inside. You will love it!

Ingredients

14 servings
  • 2 pieces of avocado for guacamole
  • 1 tablespoon of lemon juice for guacamole
  • 3 spoonfuls of red onion finely chopped for guacamole
  • 3 spoonfuls of sour cream for guacamole
  • 3 spoonfuls of serrano pepper for guacamole
  • 2 spoonfuls of coriander finely chopped, for guacamole
  • 1 tablespoon of Salt for guacamole
  • 1 Cup of whole-grain rice Cooked
  • 1/2 Cup of Oaxaca cheese
  • 1/3 of Cup of ground bread to bread
  • 1/3 of Cup of oats ground, for bread
  • 2 spoonfuls of flaxseed ground, for bread
  • 1 tablespoon of parsley finely chopped, to bread
  • 1 tablespoon of Salt to bread
  • 1 tablespoon of garlic powder to bread
  • 1 piece of egg smoothie
  • enough of cooking spray oil to bake

    Preparation

    Preheat the oven to 180 ° C.
    In a bowl, mash the avocado until you obtain a puree. Mix with lemon, onion, cream, chili, cilantro and season with salt. Incorporates brown rice.
    With the help of your hands, form balls to make croquettes, placing a bit of Oaxaca cheese in the center. Reserve.
    In a bowl mix bread with oats, flaxseed, parsley, salt and garlic powder.
    Beat the croquettes, passing through beaten egg and then the mixture of bread crumbs. Place on a baking tray and sprinkle some cooking spray.
    Bake for 15 minutes or until crispy and golden on the outside.
    Serve with salad and the dressing of your choice.
