Cauliflower Pozole

If you are taking care of your figure but you are a fan of pozole, you have to make this cauliflower pozole with chicken, cauliflower, chili peppers and spices, you will think that you are eating a real pozole but without guilt. Go ahead and try it!

Ingredients

6 portions
  • 500 grams chicken breast
  • 1/4 onions
  • 1/4 cups coriander
  • 1 leave bay (laurel)
  • 1 head garlic
  • to taste salt
  • 4 guajillo chilies, clean and hydrated
  • 4 ancho chili peppers, clean and hydrated
  • 3 allspice
  • 1 teaspoon oregano
  • 1/8 onions
  • 1 cup Water, of the chili peppers
  • 3 cups cauliflower, in small pieces (the size of hominy corn)
  • enough lettuce, To accompany
  • enough radish, To accompany
  • enough avocado, To accompany
  • enough oregano, To accompany
  • enough lemon, To accompany

Preparation

In a pot with water add the chicken breast, onion and cilantro and cook for 30 minutes or until cooked.
On a board, crumble the chicken and reserve.
Blend the chilies, allspice, oregano, onion, garlic and a cup of the chicken broth for 3 minutes and pour into the broth.
Add the cauliflower and cook for 20 minutes. Season with salt.
Serve the pozole and accompany with the meat, lettuce, radish, avocado, oregano and lemons.

PRESENTATION

Serve the pozole and serve with lettuce, radish, avocado, oregano and lemons.

TIPS

You can make it vegetarian in the same way it will be delicious.
