Ingredients

12 portions
  • 12 chickens, leg with thigh
  • 1 onion
  • 1/2 heads garlic
  • 1/4 kilos pasilla chili pepper
  • 1/4 kilos guajillo chili
  • 1/4 kilos ancho chili pepper
  • 1/2 kilos prune
  • 1/2 kilos cambray onion
  • 1 pineapple, cut into triangles
  • 250 grams butter
  • 1 pinch cumin
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch clove
  • 2 teaspoons chicken consommé

Preparation

Preheat the oven to 180 ° C.
Clean the chiles by removing the tail, then place them in hot water for 20 minutes.
Blend the chiles with the garlic, onion, cumin, cloves, salt and pepper. Strain the sauce.
Wash the onions and remove the tail.
Place the butter on the bottom cut in squares, add the onion, pineapple in triangles, the prune. Place the chicken and add the sauce; rectify the seasoning. Bathe the chicken well in the sauce and close the container with aluminum foil.
