Nothing better than making some chilaquiles at home and these are spectacular with pasilla sauce are super easy to prepare, delight your whole family with this delight.

Ingredients

4 portions
  • 2 tomatoes, cut in quarters
  • 1/4 onions
  • 1 clove garlic
  • 3 pasilla chili peppers
  • 1 Cube Knorr Tomato® Tomato Seasoning
  • 1 tablespoon oil
  • 6 cups tortilla chips
  • 1/2 onions, cut in hoops
  • 4 tablespoons fresh coriander, chopped

Preparation

Boil the tomatoes, onions, garlic and chilies in enough water for 10 minutes or until the tomatoes are soft.
Blend the above with 1 cup of the cooking water and the cube of Knorr® Tomato Tomato Seasoning. Strain.
Heat the oil and sauté the sauce over medium low heat for 10 minutes or until slightly thick.
Bat the totopos with the sauce and serve with cotija cheese; Garnish with onion rings and fresh cilantro.

TIPS

You can use these rich chilaquiles as garnish for a roast beef.
