The corn cake is a South American dish prepared with a baked pasta made from tender corn kernels, better known as corn, and, depending on the place where it is prepared, it is sweet or salty ideal to offer it as a starter or main course.

Ingredients

6 portions
  • 2 tablespoons vegetal oil, for the filling (pine)
  • 1 kilo ground beef, for the filling (pine)
  • to taste salt, for the filling (pine)
  • to taste black pepper, for the filling (pine)
  • 1 tablespoon paprika, or merken, for the filling (pine)
  • 1/2 tablespoons cumin, for the filling (pine)
  • 1 cup Water, for the filling (pine)
  • 2 cups onion, finely chopped, for the filling (pine)
  • 2 tablespoons flour, for the filling (pine)
  • 2 tablespoons butter, for the corn puree (pastry)
  • 5 cups yellow corn, for the corn puree (pastry)
  • 1/4 cups milk, for the corn puree (pastry)
  • 1/4 cups basil, for the corn puree (pastry)
  • to taste salt, for the corn puree (pastry)
  • to taste black pepper, for the corn puree (pastry)
  • 2 tablespoons paprika, or merkén, for the corn puree (pastry)
  • 1 tablespoon cornstarch, dissolved in 1/4 of water
  • 8 olives
  • to taste raisin
  • 2 eggs, cooked and sliced

Preparation

In a pot, heat the oil and fry the meat, salt and pepper. Cook for 3 minutes, add the paprika and cumin, mix and cook for 3 more minutes.
Pour in the broth and onion and cook for 30 minutes.
Add the flour and dissolve. Reservation.
For the corn puree, melt the butter and cook the corn for 5 minutes. Add the milk, basil, salt, pepper, and paprika. Cook for 10 minutes.
In the food processor, blend into a puree. Add it to a pot with the cornstarch, mix and cook for 5 minutes until it thickens.
In a mold add a layer of filling, then add the olives, raisins and the egg, then cover with a layer of corn puree.
Bake at 200 ° C for 15 minutes. Let cool and enjoy.

PRESENTATION

On a clay base, decorated with alabail and accompanied by a refreshing drink.

TIPS

Merkén or merquén is a dressing prepared with smoked dried chili pepper and other ingredients, due to its similar flavor it can be substituted for paprika.
