Preparation
Fry the purple onion in a little oil for 3 minutes or until it is clear.
In a bowl, mix soy, mustard, lemon, herbs, scallions, red onion, salt and pepper.
Cook the tuna medallions for 6 minutes on each side (first seal their sides), the center will be pink. If you like you can leave them more time so that they are more cooked.
