Ingredients

4 portions
  • 2 chicken breasts, boneless, clean
  • 1 1/4 cups wheat flour, for the batter
  • 3/4 cups cornstarch, for the batter
  • 2 tablespoons garlic powder, for the batter
  • 1 tablespoon onion powder, for the batter
  • 1 tablespoon cumin powder, for the batter
  • 3 tablespoons paprika, for the batter
  • 1 teaspoon ground oregano, for the batter
  • 1 tablespoon black pepper, for the batter
  • to taste salt, for the batter
  • 1 egg, for the batter
  • 1 1/2 cups mineral water, for the batter
  • 1 cup wheat flour, to bread
  • 1 1/2 cups cereal, corn, chopped, for breading
  • enough vegetal oil, to fry
  • 1 1/2 cups tomato sauce, ideal for preparing pizza
  • 1 cup mozzarella cheese, grated
  • 1/2 cups ham, in cubes
  • 1/2 cups pineapple, in triangles
  • enough american cheese, melted, to accompany

Preparation

With the help of a knife, open the chicken breast in two, so that you get a larger and thicker piece. On a flat surface and leaning on two plastics, flatten the breast with the help of a meat mallet or a rolling pin, remember that the thickness should not be so thin, only wide and it is possible round. Reserve until use.
In a bowl mix the wheat flour together with the cornstarch, the garlic powder, the onion powder, the cumin, the paprika, the oregano, the pepper and the salt until integrated. Add the egg and pour the mineral water little by little, mix with a balloon until you have a slightly thick mixture, you will realize that the mixture is ready when it comes off easily from the balloon.
Mix the wheat flour with the corn cereal in a wide, slightly deep bowl.
Bathe the chicken breasts perfectly in the mixture with spices and mineral water, place on the plate with flour and cereal, cover completely by pressing with the palm of your hand. Repeat until finished with the breasts.
In a pan with enough hot vegetable oil, fry the breaded breasts, remember to do it at a low temperature and with enough oil to ensure the chicken is cooked, approximately 10 minutes. Drain on absorbent paper and repeat until finished with the pieces.
Preheat the oven to 180 ° C.
Place the fried chicken pieces on a baking sheet. Spread with prepared tomato sauce, add a pinch of oregano, grated mozzarella cheese, ham and pineapple to taste. Bake for 10 minutes at 180 ° C, try to check the tray to prevent the chicken from browning. Remove from the oven, serve hot and serve with melted yellow cheese to taste.
