These delicious Fried Pumpkin Flower Quesadillas are a delicious Mexican recipe very easy to prepare.   • 1/2 cups white onion, filleted
  • 2 cloves garlic, finely chopped
  • 2 cups squash blossom, clean and chopped
  • 1/4 cups epazote, finely chopped
  • 1 pinch salt
  • 1 cup Oaxaca cheese, reduced in fat, shredded
  • enough vegetal oil, to fry the quesadillas
  • 1 cup lettuce, in strips, to accompany
  • 1/4 cups sour cream, low in calories, to accompany
  • 1 cup panela cheese, reduced in fat, crumbled, to accompany
  • 1/4 cups green sauce, To accompany


For the dough or masa, in a bowl combine corn flour with wheat flour, oil, water, salt and baking powder. Knead with your hands and add more water if necessary, to form a well-integrated dough. Reserve.
Heat a medium skillet with oil over medium heat, add the white onion, garlic, pumpkin flower, epazote, cook for 5 minutes and season to your liking. Cool the filling and reserve.
Form the tortillas and fill with reduced fat Oaxaca cheese and sautéed pumpkin flower, close the tortillas to form the quesadilla. Form all the quesadillas and reserve.
Heat a pot with vegetable oil, fry the quesadillas until they are crispy, remove the excess fat with an absorbent napkin.
Open the quesadillas and serve with lettuce, low-calorie sour cream, reduced-fat panela cheese and salsa.


Serve the quesadillas with lettuce, cream, cheese and the sauce of your choice.


The amount of water is variable, start with a cup of water and add little by little as the dough of masa may "ask" for it.
