Ingredients

4 portions
  • 500 grams hominy, precooked
  • 500 grams medium shrimp, raw
  • 250 grams pork meat, solid
  • 4 cloves garlic
  • 1/4 onions
  • 2 liters Water
  • 8 green tomatoes, for green sauce
  • 2 Green Chiles, serrano
  • 5 branches fresh coriander
  • 2 branches fresh epazote
  • 250 grams onion, finely chopped, for garnish
  • 5 lemon, match in rooms
  • 200 grams Romaine lettuce, finely filleted
  • 200 grams radish, finely sliced
  • 2 avocados, cut into thin sections
  • 150 grams pork rind, in pieces

Preparation

Cook the corn with the water, garlic, onion and pork for 20 minutes in an express pot, until the corn is soft and burst.
Blend the tomatoes, chile serrano, cilantro and epazote, with a little of the liquid from the cooking of the corn, add to the cooking of the corn, add salt and pepper and cook for 20 minutes more. In the last 5 minutes of cooking add the shrimp, so they do not overcook.
Serve the pozole and accompany it with its garnish.

PRESENTATION

Accompany it with crispy corn toast and a bit of pork rinds.

TIPS

Cook the corn for pozole in an express pot so that it is soft and well burst.
