  • 1/2 cups bacon, chopped
  • 500 grams ground beef
  • 500 grams ground pork
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/4 cups walnut, chopped
  • 1/4 cups cranberry
  • 2 goat cheeses
  • 1/4 cups flour
  • 1 kilo puff pastry
  • 2 eggs, to varnish
  • 3 cups cherry tomato, Garrison
  • 2 cups spinach, Garrison
  • 1 cup arugula, Garrison
  • 1 cup nougat, chopped
  • 1 cup dried fruit, chopped
  • 1/4 cups balsamic vinegar, for the vinaigrette
  • 1/4 cups olive oil, vinaigrette
  • 2 pinches salt
  • 1 pinch black pepper
  • 2 tablespoons thyme, chopped

Preheat the oven to 200 ° c.
Heat the oil in a pan over medium heat, add the onion and garlic, sauté for 2 minutes until it changes color.
Add the bacon, fry 1 minute, add the meat and cook for 10 minutes. Season and remove excess fat.
Add the meat in a bowl, add the walnut, cranberry and blend perfectly. Chill this preparation and add the goat cheese, mix and reserve.
Sprinkle some flour on the table and spread the puff pastry until you have a rectangle about 1 cm thick.
Place the filling on the puff pastry leaving 1 cm free. Roll without the mixture leaving the roll. Varnish with egg the free space of the meat mixture and close.
Place the roll in a baking dish, varnish and bake for 25 or 30 minutes until golden brown.
For the salad or garnish: Add spinach, arugula, cherry tomatoes cut in half, chopped dried fruit and nougat in a salad bowl. Reservation.
For the vinaigrette: Add the salt, pepper, thyme and vinegar in a small bowl, mix perfectly and gradually add the oil mixing with balloon whisk.

Serve a slice of puff pastry and accompany with salad and a touch of vinaigrette.

You can substitute goat cheese for cream cheese.
