Huauzontles Filled with Oaxaca Cheese and Pasilla Chile Sauce

These huauzontles stuffed with cheese, are weathered and salted with an exquisite pasilla chile sauce. They have a delicious filling and the contrast of flavors is simply spectacular.

Ingredients

8 servings
  • 4 cups of Water
  • 1 teaspoonful of Salt
  • 4 cups of huauzontle cleansed
  • 400 grams of Cheese Oaxaca LALA®
  • 1 Cup of flour
  • 5 eggs
  • 7 pasilla chili peppers deveined and soaked
  • 3 tomatoes
  • 1/4 of onion
  • 1 clove of garlic
  • 1/2 Cup of vegetable oil
  • 1 tablespoon of Salt for the sauce

Preparation

Boil the water with the salt over medium heat, add the huauzontles, mix and let cook for 10 minutes. Remove from heat, drain and let cool.
Squeeze the huauzontles perfectly, take a portion, fill with the Oaxaca LALA® cheese, cover perfectly and compact as much as possible.
Flour the pancakes removing the excess. Beat the eggs and cover the pancakes.
Heat the oil in a pan over medium heat, fry the pancakes, remove and drain the grease on absorbent paper.
Blend the chilies, tomato, onion and garlic with a little water, until a smooth sauce is left. Heat a little oil in a medium saucepan, pour the sauce and cook for 10 minutes over medium heat. Season
