Lasagna from Nopales

This Lent prepares a version very different from lasagna, but not for that, less rich. This lasagna is made from nopales with a delicious filling of chicken and mushrooms in chipotle sauce and gratinated with a lot of Manchego cheese.

Ingredients

6 portions
  • 1 liter Water
  • 1 tablespoon Great Value® salt
  • 1 pinch baking soda
  • 500 grams nopal
  • 5 tomatoes
  • 1/4 onions
  • 1 clove garlic
  • 3 Chile Chipotle in Adobo Great Value ®
  • 1 tablespoon Great Value® Canola Oil
  • 1 chicken breast, cooked and crumbled
  • 1 cup mushroom
  • 1/2 cups Great Value® Corn Kernels in Tin
  • 1 teaspoon Great Value® salt
  • 2 cups manchego cheese, grated
  • 1 tablespoon epazote, finely chopped, to decorate

Preparation

Preheat the oven to 180 ° C.
Cook the nopales in a pot with water, salt and baking until they are cooked. Drain and reserve.
For the sauce, liquefy the tomatoes with the onion, garlic and chilies until obtaining a homogeneous mixture.
Heat the oil in a deep frying pan and fry the sauce. Add chicken, mushrooms and corn. Cook 10 minutes and season with a little salt.
Assemble the lasagna by placing a nopal base in a refractory oven, followed by the filling of chicken and cheese. Repeat until the refractory is filled. Finish with cheese.
Bake about 10 minutes or until the cheese is gratinated. Garnish with chopped epazote.

Se ve rica y sencilla. Yo solo cambiaria el sofreír los champiñones con epazote ajo y cebolla y condimentaría la pechuga deshebrada antes de echarle la salsa ya frita.
