Mexican snacks are perfect to prepare on the weekend or to serve as appetizers in a gathering. We present this recipe of hand-made Bean Gorditas, which you can serve with lettuce and fresh cheese; You can also add cream and avocado to give it a better flavor. A great tip on how to prepare refried Bean Gorditas is that you don't fill them too much to prevent the corn masa from losing its shape and opening up.

Ingredients

6 servings
  • 2 spoonfuls of lard
  • 1/4 of Cup of onion finely chopped
  • 2 chile de árbol peppers without tails
  • 2 cups of black bean without broth
  • 500 grams of corn dough for the masa
  • 1 tablespoon of lard for the masa
  • 1 tablespoon of baking powder for the masa
  • enough of Salt
  • enough of vegetable oil to fry
  • 4 tomatoes for the sauce
  • 3 Serrano cpeppers for the sauce
  • 1/3 of onion for the sauce
  • 1 clove of garlic for the sauce
  • 1/2 Cup of coriander for the sauce
  • enough of lettuce to accompany
  • enough of fresh cheese to accompany
  • enough of cream to accompany
  • enough of avocado to decorate

Preparation

In a frying pan over medium heat, heat the lard and add the onion and the tree chiles, add the beans and with the help of a potato masher, mash the beans until soft and smooth. Let cool and set aside.
For the dough, in a bowl mix the corn masa with the lard, the baking powder, the salt and knead until incorporated.
With your hands take a little dough, form a round thick cake add a spoonful of beans in the center and close as gorditas.
In a frying pan over medium heat, fry the gorditas during 5 minutes on both sides or until browned. Drain on absorbent paper.
For the sauce, blend the tomatoes with serrano pepper, onion, garlic and cilantro until you obtaining a sauce.
On a cutting board slice your gorditas in the middle and stuff with lettuce and cheese, decorate with cream and avocado. Accompany with the sauce.

PRESENTATION

Fill with lettuce and cheese, garnish with cream and avocado.

TIPS

Do not fill the gorditas with too many refried beans to prevent the masa from opening up and losing their shape.
