Ingredients

4 portions
  • 1/2 cups evaporated milk, for the sauce
  • 1 cup sour cream, for the sauce
  • 1 cup Homemade sauce with Chipotle La Costeña®, for the sauce
  • 1 clove garlic, for the sauce
  • 1 teaspoon oregano, for the sauce
  • 1 tablespoon oil, for the sauce
  • to taste salt and pepper
  • 1 tablespoon oil, for the filling
  • 1/4 cups onion, finely chopped, for filling
  • 1 cup huitlacoche corn mushroom, for the filling
  • 1 tablespoon epazote, finely chopped
  • to taste salt and pepper
  • 1 cup Oaxaca cheese, shredding, for filling
  • 4 ancho chili peppers, deveined and soaked

Preparation

Preheat the oven to 180 ° c
For the sauce, liquefy the evaporated milk, the cream, the homemade sauce with Chipotle La Costeña®, the garlic and oregano.
Heat the oil over medium heat, pour the sauce, season with salt and pepper, cook for 10 minutes.
For the filling, heat the oil over medium heat in a frying pan, add the onion, the huitlacoche, season with epazote, salt and pepper, cook 5 min. Reservation.
Fill the chiles from the previous preparation and add oaxaca cheese.
Bake for 10 minutes.
Serve with the chipotle sauce and accompany with red rice.
