Preparation
Heat a tablespoon of oil in a pan and add the onion and fry until it is sharp. Blend the onion with the garlic, water and beans. Return everything to the same pan and sauté the sauce. Season with salt and pepper.
Heat a little oil and fry the tortillas a few seconds on each side so they heat up. Drain the tortillas on absorbent paper.
Boil the chorizo in a pan and crumble it.
Dip an omelet in the bean sauce, filled with chorizo.
Serve with cream, cheese and avocado.
