Ingredients

2 portions
  • 5 tablespoons cochinita pibil
  • 1/2 cups manchego cheese, grated
  • 2 tablespoons red onion, finely filleted
  • 1/2 lemons, (your juice)
  • 1/4 habanero peppers, finely chopped
  • 1 pinch salt

Preparation

Heat a large skillet over high heat. Stretch the cheese and let it brown to form the crust.
Add the cochinita, fold in half, remove and accompany with onion, lemon juice, habanero pepper and salt.

PRESENTATION

Serve in an extended dish and serve with flour or corn tortilla.

TIPS
