A traditional egg ranch tender, accompanied with a crispy synchronized ham and cheese and a spicy ranchera sauce. Enjoy the different textures of this dish.

Ingredients

4 portions
  • 3 tomatoes, (for the sauce)
  • 3 serrano peppers, (for the sauce)
  • 1/4 onions, (for the sauce)
  • 1 clove garlic, (for the sauce)
  • 1 tablespoon oil, (for the sauce)
  • 1 tablespoon salt
  • 1/2 teaspoons black pepper, (for the sauce)
  • 4 tablespoons oil
  • 8 corn tortillas
  • 8 eggs
  • 1/2 teaspoons salt
  • 1/4 teaspoons black pepper
  • 1/2 tablespoons oil
  • 1 can bean, (440 g)

Preparation

In a comal over medium heat, pat the tomatoes, chilies, onion and garlic.
Blend the ingredients until you get a homogeneous mixture.
Heat the oil in a pot over medium heat, and add the sauce. Let it boil and fry for 5 minutes. Season and reserve.
In a skillet over medium heat, heat the oil and fry the corn tortillas 1 minute. Drain on absorbent paper and reserve.
In the same pan, fry the eggs to taste and season.
Reheat the beans in a pan with oil. Reservation.
Serve two tortillas in an extended dish, place two eggs on top and serve with ranchera sauce and beans.

PRESENTATION

Serve in an extended dish, accompanied with ranchera sauce and chopped cilantro.

TIPS

Make sure you have the oil hot enough to cook the egg and prevent it from absorbing extra fat.
