Mole Manchamanteles with Chicken

If you still do not know how to make mole manchamanteles, with this easy recipe you will have it ready this weekend. It is a light mole made with wide chili, seeds and spices. This dish is traditionally prepared with pork loin and slices of male banana and pineapple (or some other types of fruits, the recipe depends), but for this recipe of manchamanteles, we will use pieces of chicken such as thigh and leg.

Ingredients

6 servings
  • 8 pieces of ancho chili pepper cleansed
  • 1 tablespoon of vinegar
  • to taste of Salt
  • 1/2 onion
  • 2 cloves of garlic
  • 2 spoonfuls of almond peeled and fried
  • 2 pieces of bread sliced and roasted
  • 5 roma tomatoes
  • 3 spoonfuls of vegetable oil
  • 8 pieces of chicken (leg and thigh), cooked
  • 4 cups of chicken soup (of cooking)
  • 1 tablespoon of White vinegar
  • 1 tablespoon of brown sugar
  • 1 plantain sliced and fried
  • 2 pears minced in medium cubes
  • 1/2 pineapple peeled and chopped honey
  • to taste of Salt
  • enough of plantain fried to decorate
  • enough of onion sliced, to decorate
  • enough of coriander to decorate

    Preparation

    Soak the peppers in warm water with vinegar and salt for 10 minutes, until they are soft. Grind the chiles with the onion, garlic, peanut, tomato and bread for 5 minutes. Fry the sauce with the oil for 3 minutes, add the chicken stock and cook for 10 minutes. Add the sugar, vinegar, banana slices, pear and pineapple; Add salt and cook for 5 minutes.
    Add the chicken to the mole and cook 5 more minutes.
    Decorate with a little of the fruit, serve and accompany with tortillas and a drink.

    As an alternative, you can use pork.
