Nopal Enchiladas

If you are a lover of enchiladas, we leave you a delicious version of enchiladas stuffed with nopal with corn and onion, dipped in a hot sauce of guajillo chili. Served with cream, cheese and cilantro. Try them!

Ingredients

4 servings
  • 5 cups of nopal
  • 2 liters of Water
  • 1 teaspoonful of baking soda
  • 1 tablespoon of Salt
  • 1/4 of Cup of oil
  • 4 pieces of tomato
  • 1/4 of piece of onion
  • 1 clove of garlic
  • 2 pieces of guajillo chili pepper without seeds
  • 1 Cup of chicken soup
  • 1 tablespoon of oil
  • 1/2 Cup of onion filleted
  • 1 teaspoonful of garlic finely chopped
  • 1 teaspoonful of Dried oregano
  • 1/2 Cup of corn kernels
  • 1/4 of Cup of oil to fry the tortillas
  • 12 pieces of Corn tortillas
  • to taste of cream for decorating
  • to taste of fresh cheese for decorating
  • to taste of coriander for decorating

    Preparation

    On a short board the nopales in strips.
    In a pot add water, baking soda, salt, nopales and cook until soft.
    For the guajillo chile sauce, heat the oil in a pan and fry the tomatoes, onion, and garlic, and the guajillo chili to golden brown, add the chicken broth and let reduce. Blend, strain and boil the sauce again about 10 minutes. Reserve.
    In a pan heat the oil over medium heat and cook the onion, garlic, nopales, oregano, corn, season with salt and pepper.
    Fry the tortillas for a minute with hot oil. Drain on absorbent paper.
    On a table fill the tortillas with sautéed nopales.
    Serve the enchiladas on a plate, bathe with the sauce, place the cream, and sprinkle the fresh cheese, decorate with coriander and enjoy.

    PRESENTATION

    Serve hot and garnish with cream, cheese and cilantro.

    TIPS

    When you cook nopales already cut we suggest you do it from cold water, when they change color and are soft they will be ready to eat.
