Oaxacan Memelas

The Oaxacan memelas are rich corn tortillas, spread with lard and refried beans; They are served with green or red sauce accompanied by fresh cheese. In this case it takes meat giving it a different touch and making them a more complete dish.

Ingredients

  • 500 grams of corn dough for tortilla
  • 2 spoonfuls of lard
  • 1/2 Cup of refried beans
  • 500 cups of fresh cheese
  • 500 grams of beef or jerky
  • 1/2 Cup of guacamole To accompany
  • 1/2 Cup of grasshoppers To accompany
  • to taste of green sauce or red, to accompany

    Preparation

    Form small balls of dough, crush them to form an omelette 10-12cm in diameter, the tortilla should be thick between 5-8mm thick.
    Cook on the comal over medium high heat for 15 minutes, turning them to cook on both sides.
    Cook the meat and cook it.
    Pinch the tortillas along the edges, leaving a border so that the beans do not overflow.
    Spread lard in the center of the memela, add beans and cheese.
    Add meat, grasshoppers, guacamole and sauce to taste.

    TIPS

    When you pinch them, moisten your fingers with cold or warm water.
