The Charales are small fish that are dried in salt to consume them, they are very rich and economical, traditionally I find them during the Lenten season. They are a perfect substitute for when your family is tired of eating meat. Try these delicious pancakes of charales.

Ingredients

2 portions
  • 150 grams Charal
  • 4 eggs
  • vegetal oil, necessary amount
  • 2 leaves fresh epazote

Preparation

Quitales the head to the charales before cleaning them, as they are conserved in salt we will have to rinse them in clean water until the excess of salt is gone, they will notice that when the salt is removed the charales will become smooth.
Once the charales are clean, dry them well before frying. Fry until golden brown.

Solo una observación, si los chavales se sobrefrien adquieren un sabor amargo, lo recomendable es freírlos ligeramente,
