Ingredients

  • 300 grams wheat flour, for the dough
  • 50 grams butter, for the dough
  • 1 egg yolk, for the dough
  • 1 cup manchego cheese, grated, for the dough
  • 1 teaspoon salt, for the dough
  • 1 teaspoon Rexal® Baking Powder, for the dough
  • 2 tablespoons Water, for the dough
  • 1 cup bacon, finely chopped
  • 1/2 cups onion, finely chopped
  • 1/2 tablespoons garlic, finely chopped
  • 1 kilo beef steak, (ball) cut into cubes
  • 1 cup red pepper, cut into strips
  • 1 cup yellow bell pepper, cut into strips
  • 2 cups manchego cheese, grated
  • 1 egg, to varnish
  • enough pico de gallo, to serve with
  • enough guacamole, to serve with

Preparation

Preheat the oven to 180 ° C.
For the dough, in a bowl, beat the flour with butter, yolk, manchego cheese, salt, REXAL® baking powder and water until you have a homogeneous dough. Refrigerate covered for 15 minutes.
Meanwhile, in a pan over medium heat, cook the bacon until it browns, then add the onion and garlic, and cook until bright. Add the steak, season with salt and pepper and cook until it begins to release its juices.
Add the peppers, cook for 5 more minutes, add the cheese and remove. Chill the preparation.
On a floured surface, spread the dough and cut a circumference of 35 cm in diameter. With a knife, form an asterisk in the center of the circle, taking care not to reach the edges of the dough. Around this, accommodate the filling, bend the tips of the asterisk towards the edge of the circumference to close the ring.
Place the ring on a baking sheet and varnish with beaten egg. Bake for 20 minutes or until golden brown. Remove.
Serve with pico de gallo and guacamole at the center.

PRESENTATION

On a plate, accompanied with pico de gallo and guacamole.

TIPS

It is important that you leave the dough to rest so that when it is extended it will not contract. Use any pot lid to mark the circumference of the dough.
