Ingredients

4 servings
  • enough of Water
  • enough of Salt
  • 3 pieces of potato peeled and cut into cubes
  • 4 pieces of poblano pepper
  • 1 Cup of sausage
  • 1/4 of Cup of onion finely chopped
  • 1 tablespoon of garlic finely chopped
  • enough of salt and pepper
  • enough of sour cream to garnish
  • enough of pork rind crumbled, to garnish
  • enough of avocado in cubes, to garnish
  • enough of fresh cheese crumbled, to garnish
  • enough of parsley to garnish

    Preparation

    In a pot with boiling water and salt cook the potatoes for about 20 minutes or until they are soft. Remove, drain and reserve.
    In a comal or grill roast the chiles and place them in a plastic bag. Close and rest about 15 minutes.
    Remove the chiles from the bag, peel them and open in the middle with a knife, taking care not to break them. Remove the seeds and veins. Set aside.
    In a hot pan, cook the chorizo until it releases the fat, add the onion and garlic, cook a few minutes and add the potatoes. Season to taste with salt and pepper.
    Fill the peppers with the potato with the potato stew with chorizo.
    Serve in dishes and decorate with cream, chopped chicharrón, avocado, fresh cheese and parsley.

    PRESENTATION

    Garnish with sour cream, fresh cheese, avocado, parsley and chicharrón.

    TIPS

    You can substitute the poblano pepper for the chile that you like the most, also use dried chiles as ancho or pasilla chiles
