Ingredients

4 portions
  • 500 grams hominy, precooked
  • 250 grams pork head, cut into pieces
  • 400 grams pork meat, backbone and pulp cut into pieces
  • 4 cloves garlic, whole with skin
  • 1/4 onions
  • 25 grams sea salt
  • 4 whole black pepper
  • 250 grams white onion, finely chopped for garnish
  • 5 limes, cut in fourths
  • 250 grams romaine lettuce, cost in very thin strips
  • 250 grams radish, cut into small cubes
  • 200 grams pork rinds, in pieces
  • 2 avocados, cut into segments

Preparation

Cook the meat with the 1/4 of onion, the cloves of garlic and the whole peppers until the meat is done, remove the meat and shred or chop.
In the broth where the meat was prepared, cook the corn kernels, until they burst and is well cooked, season and return the meat to finish the cooking, approximately 30 to 40 minutes.
Serve and accompany with your respective garnish.

PRESENTATION

Accompany your white pozole, with cream, corn tortillas chips, lemon, avocado and delicious fruit water.

TIPS

Cook the corn in an express pot to save cooking time.

Bueno,no siempre se puede hacer un platillo siguiendo la receta original, especialmente cuando vives en otros países donde es dificil, o imposible conseguirlos, así que no hay que ser tan tiquis miquis, Rosario Vazquez. Yo ya lo hice y me salió muy rico, claro que nunca será el mismo sabor al que uno está acostumbrado.
