Preparation
Wash the spinach leaves and disinfect them.
Cut the onion into thin strips and finely chop the garlic.
Cut the cherry tomatoes in half.
Heat 1 tablespoon of olive oil in a deep skillet.
Sauté the garlic and onion for about 3 minutes until they become translucent and release their aroma.
Add the pasta, the spinach leaves, the tomatoes, the thyme and the basil to the pan. Add the vegetable broth stirring occasionally, simmer for about 12 minutes or until the liquid has reduced. Season with salt and pepper.
Serve sprinkling Parmesan cheese.
