Preheat the oven to 180 ° C.
Heat a pot with water until it reaches a boiling point, dip the basil and Eva® Spinach in the water, cook for 2 minutes, remove and immerse immediately in a bowl with water and ice. Drain and reserve.
For the pesto, liquefy the bleached leaves, with the olive oil, the sunflower seeds, the garlic and season with salt and pepper. Blend until you get the pesto and reserve.
On a tray place baking paper, add a layer of cherry tomatoes, carrot, pumpkin, thyme, chili flakes, Spinach Eva® leaves. Place a fillet of salmon on top, season with salt and pepper and cover with a little pesto. Repeat with the other salmon fillet.
Close the paper with a hemp thread, bake for 15 minutes, remove from the oven and serve immediately.
