For this recipe you will not have to buy BBQ sauce. These Stovetop BBQ Ribs are very easy to make and the best thing is that you do not need a grill to cook them, you can make them on your stove. It is key to cook the pork ribs previously, so that they stay juicy; when cooked slowly, they absorb water and keep their flavor. The BBQ Ribs are a typical dish of the United States, but the name comes from the French "barbe a queue" which means from the beard to the tail, because entire pigs were cooked for this delicious meal.

  • 2 tablespoons butter, for the bbq sauce
  • 1 cup tomato sauce, for the bbq sauce
  • 1/2 cups ketchup, for the bbq sauce
  • 1/4 cups worcestershire sauce, for the bbq sauce
  • 1/2 cups dark beer, for the bbq sauce
  • 1/2 cups raw sugar, for the bbq sauce
  • 1 tablespoon garlic powder, for the bbq sauce
  • 1 tablespoon onion powder, for the bbq sauce
  • 1 chipotle chili, for the bbq sauce
  • 1 tablespoon Cayenne pepper, for the bbq sauce
  • 1 cup pineapple syrup, for the bbq sauce

  • 1/4 cups chipotle peppers in adobo sauce, for the bbq sauce
  • 2 tablespoons Tabasco sauce, for the bbq sauce
  • 1/4 cups bee honey, for the bbq sauce
  • 3 cups dark beer, to cook the ribs

Preparation

For the marinade, place all the powders in a bowl with the olive oil and mix until you obtain a thick and spreadable consistency. Spread it on top of the ribs and refrigerate for 1 hour.
For the BBQ sauce, heat a pot over medium heat with the butter, add all the ingredients of the BBQ sauce one by one and cook until thick. Season with salt and pepper and set aside.
Heat a deep skillet over high heat, seal the ribs until no raw surface remains. Bathe the ribs with the BBQ sauce until they are completely covered, fill the refractory with the dark beer, cover with aluminum foil and cook for two hours or until they are soft, constantly bathing with the juice.
Once the ribs are cooked, remove from the stove, cut and bathe with more BBQ sauce. Serve with mac & cheese and enjoy.

PRESENTATION

Serve the ribs with a side of mac & cheese.

TIPS

Remember that the more you cook your ribs at a low temperature, the more tender they will stay. You will know that your ribs are cooked when they reach 150°F (67 °C). Constantly add BBQ sauce so that the ribs don't dry out. Remember that covering your meat with some fat before sealing it helps you protect the product, and fats also provide a lot of flavor.
