Ingredients

6 portions
  • 6 bell peppers, whole
  • enough Water, hot
  • enough Water, with ice, to cool the peppers
  • 2 tablespoons canola oil
  • 1/2 cups onion, finely chopped
  • 1 cup Water
  • 1 tablespoon Knorr 100% Natural Vegetable Broth
  • 1 cup potato, in small cubes
  • 1 cup beets, in cubes
  • 1 cup carrot, in small cubes
  • 1 cup chayote squash, in medium cubes
  • 1 cup pumpkin, in small cubes
  • 1 cup broccoli, in bouquets
  • enough praline sesame, to decorate
  • enough pumpkin, to decorate, cut into strips
  • enough carrot, to decorate

Preparation

On a board, cut the top of the orange bell pepper (where the stem is located) so that you have a small cap, remove all the seeds and veins with the help of a spoon until the inside is clean.

With the help of a small knife, cut and shape the pepper's eyes, nose and smile, simulating a carved pumpkin. You can make the eyes and nose with the shape of a triangle and for the smile, draw irregular lines. Repeat this process with all the peppers.
Heat water in a saucepan until it boils and place the carved pepper. Cook for 3 minutes over low heat. Remove the pepper from the boiling water, drain and immediately place in a bowl with ice to cool; Remove from the water and drain again. Reserve until use.
In a saucepan over medium heat heat the canola oil, fry the onion until they change color. Pour in the water and add a tablespoon of Knorr 100% Natural Vegetable Broth, stir until completely dissolved. Add the beets, potatoes, carrots, chayote, pumpkin, broccoli, cook until the vegetables are soft and the broth begins to reduce. Remove from heat and reserve.
Fill the peppers with the vegetable mixture. Garnish with praline sesame, pumpkin and carrot in ribbons. Ready!

PRESENTATION

Garnish with caramelised sesame seeds.

TIPS

It is important to cool the carved peppers immediately, as this way the figure can remain firm.
