This recipe for sweet potato pancakes will be ideal for a balanced diet. Sweet potatoes contain vitamins and minerals, their orange color is given by beta catorenes, which help to take care of the immune system. Ingredients

6 portions
  • 1/4 onions, for the sauce
  • 2 cloves garlic, for the sauce
  • 8 guajillo chiles, clean, without veins or seeds, hydrated and soaked in hot water
  • 1 tablespoon oregano, for the sauce
  • 1 cup water, for the sauce
  • 1 Cube Knorr® tomato bouillon
  • 2 tablespoons olive oil, for the sauce
  • 3 sweet potatoes, without skin, cooked and in large cubes, for the pancakes
  • 1 cup pumpkin, grated, for the pancakes
  • 1 cup carrot, grated, for the pancakes
  • 1 tablespoon onion powder, for the pancakes
  • 1 tablespoon garlic powder, for the pancakes
  • 1 tablespoon cumin, for the pancakes
  • 1 tablespoon cornstarch, for the pancakes
  • 1/4 cups jalapeño pepper, finely chopped, for the pancakes
  • 1 piece (if it appears in the ingredient) egg, for the pancakes
  • 3/4 cups oats, ground, for the pancakes
  • 1/4 cups coriander, finely chopped, for the pancakes
  • olive oil, to fry
  • Cotija cheese, crumbled, to accompany
  • coriander, to decorate

Preparation

In a hot comal roast the onion along with the garlic until they have a dark color, stirring constantly so that all the sides cook evenly. Remove from heat. Blend together with the hydrated guajillo chili, the oregano, the water and the Knorr® Tomato cube until completely integrated.
Pour the smoothie into a pot with hot olive oil, cook over medium low heat for 8 minutes. Remove from heat and keep warm until use.
In a bowl place the sweet potato in cubes, with the help of a potato masher, press until obtaining a puree; add the pumpkin, carrot, onion powder, garlic powder, cumin, cornstarch, cuaresmeño pepper, egg, ground oats and coriander, mix and integrate until obtaining a manipulable consistency
Take a little of the mixture and with the help of your hands, form a small sphere, then squash until you form a pancake half a centimeter thick. In a hot skillet with olive oil, cook the pancakes on both sides over medium low heat. Drain on absorbent paper.
Serve the pancakes bathed with tomato sauce, accompany with Cotija cheese and decorate with coriander leaves.

TIPS

Add a little melted butter to the sweet potato preparation, it will give it a unique and delicious flavor.

No le gustaron a nadie en mi familia saben crudas por dentro y no podía hacer las pelotitas todo se me quedaba embarrado

Eliminé la salsa y sólo freí las tortitas, acompañándolas de una ensalada con lechugas y también resultaron deliciosas!!
