If you are a Tex-Mex fan, this incredible recipe for "lasagna" made with chili con carne, layers of fried flour tortillas and lots of cheese, will make each bite taste unbeatable. You've never tried anything like that!

Ingredients

6 portions
  • 1 tablespoon oil
  • 1 onion, cut in quarters
  • 2 cloves garlic, finely chopped
  • 1 red bell pepper, cut into cubes
  • 4 tomatoes, peeled, finely chopped
  • 1/2 cups corn, yellow
  • 500 grams ground beef
  • 1 teaspoon chilli powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon raw sugar
  • 1/2 teaspoons dry thyme
  • 4 tablespoons mashed tomatoes
  • 1 1/2 cups black bean, cooked and without broth
  • 1 cup beef broth
  • to taste salt and pepper
  • enough oil
  • 15 flour tortillas
  • 1 1/2 cups cheddar cheese
  • 1 1/2 cups monterrey cheese, jack

Preparation

Preheat the oven to 180 °C (356°F)
In a pan heat the oil over medium heat and cook the onion, garlic, pepper, tomato, yellow corn around 10 minutes.
Add the beef, season with salt and pepper and cook until it is done, add the chili powder, the paprika, the cumin, the sugar, the thyme and the tomato puree. Cook around 10 more minutes.
Add the black beans, the beef broth and cook for 40 minutes over low heat. Season to taste.
Square the tortillas with a knife so that they fit well in the baking dish and fry with hot oil until browned. Drain on absorbent paper.
In an oven proof dish form a layer of tortillas and add some meat, cheese and repeat the procedure until filling the oven proof dish.
Bake for 15 minutes or until the cheeses are completely melted. Serve

PRESENTATION

In an extended dish, accompanied by a salad and a refreshing drink.

TIPS

Fry flour tortillas over low heat so they don't burn and drain on absorbent paper.
