Preparation
Heat the oil in a nonstick skillet over low heat.
In a bowl, beat the eggs, milk and salt until everything is well together.
Pour the mixture of the eggs into the pan and place the slices of zucchini and the stems of asparagus cut on the eggs.
Cover and continue cooking until the eggs set.
Cook for about 7 minutes.
Sprinkle with grated cheddar cheese, cover and cook another 3 minutes or until the cheese melts.
When serving, sprinkle with a little ground pepper.
