Cheese Tortitas with Corn

Tortitas are always a rich, fast and delicious dish. Prepare these crunchy corn-based tortitas with cream cheese and manchego cheese, a light touch of golden bacon, with a panko breadcrumbs crust and served with a coriander and chipotle dressing. Simply delicious!

Ingredients

8 servings
  • 2 cups of cream cheese cut into cubes for the tortitas
  • 1 cup of manchego cheese grated, for the tortitas
  • 2 cups of corn kernels yellow, for the tortitas
  • 3 tablespoons of white onion
  • 3 tablespoons of bacon fried and finely chopped
  • 1/2 cup of panko bread crumbs for breading
  • 1 cup of ground bread for breading
  • 1 pinch of salt for breading
  • 2 eggs beaten for the breading
  • 1/4 of cup of oil
  • 1/2 cup of sour cream for the dressing
  • 1/2 cup of mayonnaise for the dressing
  • 1 tablespoon of lemon juice for the dressing
  • 1/4 of cup of fresh coriander
  • 2 chipotle peppers in adobo sauce
  • to taste of fresh coriander To accompany
  • to taste of fresh cheese To accompany
  • to taste of avocado cut into cubes to accompany

Preparation

For the pancakes, in a bowl mix the cream cheese with the manchego cheese, with the yellow corn, the garlic, the white onion and the bacon until obtaining a consistent mixture. Form the tortitas with your hands and reserve.
In a bowl, combine the panko with the ground bread and salt. Bread the tortitas with flour, egg and bread crumbs.
Heat a pan over medium heat with the oil, cook the tortitas until they are crispy. Drain on absorbent paper.
For the dressing, blend the cream with mayonnaise, lemon juice, cilantro, salt and pepper.
Serve your pancakes with the dressing, coriander leaves, fresh cheese and avocado to accompany. Enjoy

PRESENTATION

Decorate the tortitas with the dressing, the coriander leaves, the avocado and the fresh cheese.

TIPS

If the breading is not perfect you can make a double breaded so it is very crispy. Serves hot to enjoy the perfect consistency of melted cheese.
