Ingredients

4 servings
  • 6 pieces of pumpkin
  • 1 tablespoon of olive oil
  • 1/4 of piece of onion finely chopped
  • 1 clove of garlic finely chopped
  • 2 pieces of tomato chopped
  • 3/4 of Cup of corn yellow
  • 2 pieces of serrano pepper thinly sliced
  • 10 pieces of cherry tomato in halves
  • 1 tablespoon of Knorr® vegetable broth
  • 1/2 piece of avocado in slices, to decorate
  • 1 branch of coriander to decorate
  • 1 tablespoon of Panela cheese to decorate

    Preparation

    With a knife, cut the zucchini into very thin strips along the length to give the shape of "noodles".
    In a deep frying pan over medium heat, heat olive oil and cook onion and garlic until transparent. Add the tomato and cook until it releases its juice. Add the corn, the serrano pepper, the cherry tomatoes and cook 1 minute more.
    Add the zucchini noodles and cook for 2 more minutes, season with Knorr® vegetable broth and oregano.
    Serve noodles with avocado, cilantro and crumbled panela cheese.
