Ingredients

2 portions
  • 1 cup potato, cooked and cubed
  • 1 cup fresh cheese, crumbled
  • 1/2 cups white onion, finely chopped
  • enough salt and pepper
  • 2 tablespoons vegetal oil
  • 6 tortillas, - cactus
  • 1 cup nopal, cured and cut into thin strips
  • 1 cup red onion, filleted
  • 1 cup tomtato, cut into thin strips
  • 1 tablespoon oregano
  • 2 tablespoons olive oil
  • 1 boat Sauce La Picante Herdez® Southeast Region, 320g
  • enough sour cream, to decorate
  • enough fresh cheese, crumbled, to decorate
  • enough radish, sliced, to decorate

Preparation

In a bowl mix the cooked potato with the fresh cheese, the white onion, the salt, the pepper and mix until integrating. Set aside.
Heat a comal over medium heat with the oil, pass the tortillas in oil, remove and place on an absorbent paper. Fill them with the previous preparation and roll up like an enchilada.
In a bowl mix the cactus with the purple onion, the tomato, the oregano, the olive oil and season to your taste.
In a pot, heat the Spicy Sauce Herdez® Región Sureste over medium heat and sauté the enchiladas. Serve with the cactus salad, cream, cheese and radish.

TIPS

The curing of nopales is done by rubbing the nopales with salt until they are soft, they are rinsed and ready to eat, they retain their properties and also a beautiful green color.
