Preparation
Extend the puff pastry dough and line it with a cake mold; prick the bottom several times with a fork and cover it with aluminum foil pressing the walls well so that they do not come down when baking. Put some weight so that the dough does not rise (I put legumes)
Cook the dough in the oven, previously heated 180º C or 200º C for 10 minutes; Remove the aluminum and cook it 5 more minutes.
Cut the zucchini and onion into thin slices and sauté them in oil, over a low heat, until they begin to take color.
Beat the eggs; add the evaporated milk and season with salt and pepper. Add half of the grated cheese.
Fill the bottom of the cake with the cooked vegetables and cover with the previous preparation.
Cook the quiche in the oven, previously heated at 180º C or 200º C for 35 minutes. Sprinkle the rest of the cheese on top and granite for 5 more minutes.
Remove from the stove and serve.
