Cilantro Chicken Tostadas

Chicken toasts are classic at the tables of Mexican families, give a twist to the typical toast with this rich recipe of cilantro chicken with a touch of green chile. Serve with cheese, lettuce and avocado. What are you waiting to prepare them?

Ingredients

4 portions
  • 3 green tomatoes
  • 1 clove garlic
  • 1/4 onions
  • 2 serrano peppers
  • 1/2 cups fresh coriander
  • 1/2 cups sour cream
  • 1/3 cups chicken soup
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 800 grams chicken, shredding
  • 8 fried or toasted corn tortilla, of corn
  • 300 grams refried beans
  • 1 cup lettuce, chopped
  • 1/2 cups fresh cheese, fallen apart
  • 1 avocado
  • to taste fresh coriander, chopped, to decorate

Preparation

Blend the green tomato with the garlic, onion, chili, cilantro, sour cream, chicken broth and salt. Strain the sauce.
In a small pot over medium heat melt the butter and add the sauce. Once it is boiling, reduce heat and cook until thick. Add the chicken and cook 10 more minutes. Season and remove from heat.
Spread some beans on each toast, add lettuce, chicken, sprinkle the cheese and decorate with avocado and cilantro. Serve.

PRESENTATION

Serve with avocado and crumbled cheese.

TIPS

To make them healthier use baked toast and replace the sour cream with low-fat cream.
