Ingredients

6 portions
  • 1 kilo pork rib, in pieces
  • 1 kilo nopal, cut into cubes and cooked
  • 2 ancho chili peppers
  • 3 guajillo chilies
  • 4 chile de árbol peppers, or bird's beak
  • 6 cloves garlic
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 1/2 liters Water

Preparation

Blend about 5 cloves of garlic in 1 liter of water and heat over medium heat.
Add the ribs and cook until the water evaporates (reserve a bit to make the sauce).
The next step is to roast the chiles and put them to soak until they are soft, liquefy with a little of the water from the cooking of the meat.
Once the meat is cooked and a little browned, add the liquid chilies and add water until covered.
Add the nopales already cooked.
Season to taste.

PRESENTATION

Serve with red rice and beans.

TIPS

You can add a bay leaf to the cooking of the meat to perfume it.
