Preparation
The potatoes are washed, peeled and cut into strips. Season with salt and fry in a pan with a lot of olive oil. When they are golden, they are removed from the oil and dried with a paper towel.
Sauté the chorizo with the asparagus and mix with the potatoes.
In another skillet with little oil fry the starry eggs trying to make the yolk is liquid and the white barely cooked. They are removed and put on the potatoes.
Mix the eggs with the potatoes, the egg yolks being liquid will help to join the dish.
Sprinkle with coriander
