Preparation
In a bowl, mix the corn dough with the lard, the salt, the water and knead until it integrates.
On a cutting board, form a roll of dough with the help of your hands and place it vertically in the tortilla press, press and form the huaraches.
In a comal, cook the huaraches for 3 minutes on each side or until they are cooked.
In a frying pan with oil, drain the huaraches on both sides and drain on absorbent paper. Keep warm and set aside.
For the filling, in a pan, cook the onion, garlic, serrano chili and chorizo for 5 minutes or until the sausage is cooked. Remove the excess fat and add the potato, cook a few more minutes and season with salt and pepper.
In a frying pan with oil, heat the refried bay beans and season with salt and pepper.
For serve, spread the huaraches with a little of the refried bay beans, add the potato with chorizo, a bit of lettuce, cream, cheese and avocado.
Serve with green sauce and enjoy.
