Ingredients: olive oil; 1 chicken, whole, chopped, clean and skinless; salt; pepper; 1 tablespoon oregano; 1 cup onion, in cubes; 1 teaspoon garlic, finely chopped; 1 cup carrot, in cubes; 1 cup green bell pepper, in cubes; 1 1/2 cups tomato, in cubes; 1 bay leaf; 3 liters water; salt; 1 sprig parsley; 2 cups corn masa flour, for the balls; 1 cup fresh white cheese, for the balls, grated; broth, from the soup, for the balls

Pour the olive oil into a pot and heat over medium temperature. While it heats up, season the chicken with salt, pepper, and oregano and cook for 10 minutes or until golden brown. Remove and set aside. Add the garlic, onion, bell pepper, carrot, tomato, and bay leaf to the same pot where you browned the chicken. Cook over medium heat for 5 minutes and add the water and parsley sprig. Let it boil.
