Ingredients

4 portions
  • 3 tablespoons olive oil
  • 150 grams huitlacoche mushroom, can be used canned
  • 3 cloves garlic
  • 1/2 onions, small bite
  • 4 tomatoes, small bites
  • 250 grams pasta
  • 1 can tuna
  • 1 ear corn, Cooked
  • pepper, to taste
  • chives, to decorate

Preparation

Add the oil in a pan, fry the minced garlic and onion until golden brown. Make sure everything is finely chopped
Remove the water from the tuna, and add to the pan. Fry the tuna, stirring, mix it for 5 minutes. Until the tuna begins to brown.
Add the chopped tomatoes, mashing them to obtain a sauce consistency. Approx 10 minutes. Add salt and pepper to your liking.
Add the huitlacoche to the mixture and the corn kernels. Make sure to save a few kernels of corn for plating.
Simultaneously boil 5 liters of water in a pot. Add olive oil, a couple of onion slices and salt. Add the pasta once the water is boiling. Cook the pasta until it is "al dente" (approx 8-12 minutes).
Drain the pasta and add the sauce.
Serve with the corn kernels and chives.
