Ingredients

6 portions
  • 2 cups flour
  • 2 eggs
  • 1/4 cups olive oil
  • 3 tablespoons water
  • 1 teaspoon salt

Preparation

Mix the eggs and olive oil in a food processor or blender. Once they are well mixed add the flour and salt and mix for 5 minutes or until the dough is well mixed.
Add the water little by little and continue mixing until it reaches a consistency of dough without lumps and that it is not runny.
Remove the dough from the processor and knead with your hands on a surface with a little flour.
Cover the dough and let it rest for 20 minutes.
To use and make the ravioli with a rolling pin, flatten the dough on a surface with a little flour until it is as thin as possible.
With a cookie cutter of the desired size cut the ravioli, place a little of the filling and fold in half to make half moons.
With a fork, lightly squeeze the edges.
To cook, allow the ravioli to dry for at least 60 minutes. Bring plenty of salted water to a boil and cook the ravioli until they float and have cooked for approx. 5 minutes.

PRESENTATION

Serve with a white or pomodora sauce and grated Parmesan cheese.

TIPS

The ravioli can be filled with Parmesan cheese, ricotta cheese, spinach, mushrooms, etc.
