Preparation
Mix eggs in a food processor or in a blender , and olive oil. Once they are well mixed add the flour, and salt and mix for 5 minutes or until the dough is well mixed.
Add the water little by little and continue mixing until you reach a lump-free mass consistency that is not watered down.
Remove the mass from the processor and knead it with your hands on a surface with a little flour.
Cover the dough and let it rest for 20 minutes.
To use and make the ravioli with a rolling pin, flatten the dough on a surface with a little flour until it is as thin as possible.
With a cookie cutter the size I wanted to cut the ravioli, place a little of the filling and fold in half to make half moons.
With a fork, lightly squeeze the edges.
To cook let the ravioli dry for at least 60 minutes. Boil plenty of salt water and cook the ravioli until they float and cook for approx. 5 minutes.
