Ingredients: 2 tablespoons olive oil; 1/2 onions, chopped; 2 cloves garlic, chopped; 1 carrot, chopped; 1 slice Roma tomato, cut in half; 1 can tomato purée, large; 1 onion, finely chopped; 1 clove garlic, chopped; 1 kilo ground meat; 1 glass white wine, dry; 3/4 kilos ricotta cheese; 2 eggs; 1/2 slices Mozzarella cheese, grated; 2 cups Parmesan cheese, grated; 1/2 cups parsley, chopped; lasagna pasta; salt; pepper; nutmegs

Sauté the onion, garlic, and carrot, add the tomato and puree, and let it simmer on very low heat once it boils for about an hour, strain and set aside the Bolognese sauce. Sauté the onion and garlic until colored for about 20 minutes in olive oil, add the meats and cook until they are no longer pink, add the prepared tomato, the wine; season with salt and pepper.
