Ingredients

4 portions
  • 1 package penne pasta, The modern
  • 3 pumpkins, italian
  • 1/2 onions, finely chopped
  • 1/2 red bell peppers, chopped
  • 1 clove garlic, chopped
  • olive oils, necessary amount
  • fine herbs, to taste
  • 1 pinch salt
  • panela cheese, grated
  • 1 pinch black pepper

Preparation

Cook the pasta al dente and reserve.
Wash the pumpkins and slice them.
In a frying pan add olive oil and sauté the onion and garlic, add the pepper to brown it a little.
Place the pumpkin slices in bed form on top of the onion, pepper and garlic and add another little olive oil on top.
Add salt, pepper to taste and sprinkle with the fine herbs.
Cover the pan and cook over medium heat so that the cooking is almost steamed.
Flip the pumpkins so that they cook more evenly on both sides.
Once the pumpkins are cooked, add the drained pasta and let it brown a little.
Serve with a sprinkle of grated cheese.

PRESENTATION

Sprinkle with grated cheese and serve with some roasted chicken breast strips.

TIPS

It is important not to overcook the pumpkins, they should be a little hard and crisp.
