Ingredients

4 portions
  • 4 cups arugula, washed and disinfected
  • 1 cup dehydrated cranberry
  • 120 grams goat cheese, fallen apart
  • 1 cup walnut, chopped
  • 1 cup olive oil, (dressing)
  • 1 cup cranberry juice, light, cut in half (dressing)
  • 1/2 cups Splenda, No Calorie Sweetener, Granulated (dressing)
  • 1 tablespoon bee honey, optional (dressing)
  • 1 tablespoon balsamic vinegar, (dressing)
  • salt, and pepper to taste

Preparation

For the cranberry dressing, liquefy all the ingredients.
Apart, mix the arugula with the dressing until it is well incorporated and add the dried cranberry, goat cheese and chopped nuts.

PRESENTATION

Serve in a salad bowl.
