Prepare this delicious Avocado and Corn Salad, a quick and easy option for a snack or for dinner. You can prepare this easy salad recipe with the fresh crunch of cucumber along with a ground pepper and lime dressing

Ingredients

4 servings
  • 1/2 Cup of corn off the cob
  • enough of Water
  • 1/2 tablespoon of Salt
  • 2 cups of french lettuce chopped
  • 1/2 Cup of corn kernels yellow
  • 1 piece of cucumber finely diced
  • 1/2 Cup of celery finely diced
  • 1 Cup of cherry tomato halved
  • 2 pieces of Avocado from Mexico finely diced
  • 1/4 of Cup of coriander chopped
  • 1 Cup of Panela cheese cubed
  • 1/4 of Cup of lemon juice
  • 2 spoonfuls of pineapple juice
  • 1 clove of garlic finely chopped
  • 1 tablespoon of chilli powder chile powder
  • 1/4 of teaspoonful of cumin
  • 1/2 teaspoonful of Salt
  • 1/2 teaspoonful of black pepper ground
  • 2 spoonfuls of olive oil

    Preparation

    In a pot with boiling water and salt, cook the white corn about 15 minutes or until soft. Drain and cool down
    In a bowl, mix white corn kernels with chopped lettuce, yellow corn, cucumber, celery, tomato, avocado, cilantro and panela cheese
    Mix in lime juice, pineapple juice, chili powder, cumin, salt, pepper and olive oil. Combine thoroughly and serve

    PRESENTATION

    Mix everything in a bowl and serve

    TIPS

    If you are not going to consume the salad immediately, try to add the dressing until just before serving to avoid the lettuce getting soggy
