Preparation
First the shrimp are peeled, washed and cleaned and placed in a bowl.
Chop celery and lettuce and add to the bowl with the shrimp.
The juice of the 2 lemons is squeezed and mixed with the olive oil, salt and pepper and added to the bowl of the shrimp. Everything is very well mixed.
Two avocados are cut into cubes and these are added to the bowl of the shrimp. The other two avocados are cut in half and the skin is removed. Soak in a little water with lemon to prevent them from wilting.
Fill the 4 halves with the shrimp salad and place them on a single plate each.
Finally, in another bowl mix mayonnaise and chipotle and place a spoonful on each avocado.
